The first time I had this dish, it was in Ippudo (they do ridiculously good vegan ramen FYI!). I have been thinking about this non-stop since it started getting warm. Its great as a side dish or if you're anything like me - just eat it like a salad!

Japanese Cucumber with Sesame Dressing
Serves 4
Preparation Time: 10 mins
Ingredients
1 English Cucumber
Seasoning
1 clove Garlic, minced
1 tbsp Sesame Seeds, roasted
2 tsp Light Soy Sauce
1/8 tsp Chilli Powder
Pinch of Chilli Flakes
1/4 tsp Sugar
3 tbsp Sesame Oil
Instructions
Slice Cucumber into 5mm thick discs.
Mix together Seasoning Ingredients.
Add in Cucumbers and mix well.
Serve immediately (or chill in fridge until ready to serve).
